I love add-ins on pancakes. Raisins, almonds, maple syrup, apples, pears, anything you want! Be creative. If you use mashed up berries you can make pink or purple pancakes–which my pink-loving neice thinks is soo cool. 🙂
Here’s the recipe for the pancake base. It is not my ultimate favorite, because the baking soda makes it puff up fairly quickly, so you get cake-like pancakes. That sounds delicious, and really it tastes good, but it is kind of hard to pour, so as long as you’re cool dipping the batter into the pan as opposed to pouring it, then you’re good.
